How was cheese first discovered? How do you make beer? What happens to meat during it’s cooking process? What is the chemical make up of Pasta and why does it stick together? Why do egg whites turn pink when stirred in a copper bowl?
An amazing guide to everything culinary. Knowledge is power. Or maybe a dangerous thing. Regardless, a highly recommended book to have on your bench while cooking. I seem to peruse it daily.
